Corn Cake Breakfast Stack with Bacon and Eggs

Ingredients
  • 4 fried eggs
  • 8 slices cooked bacon
  • 4 cheesy corn cakes (find corn cake recipe at www.TheYummyLife.com/recipes/110)

Directions
Assemble each breakfast stack in this order: corn cake on the bottom, 2 slices of bacon on top of the corn cake, 1 egg on top of the bacon. Sprinkle with freshly ground pepper.

VARIATIONS TO TRY:
--Egg layer - fried, poached, scrambled, or a sliced boiled egg
--Meat layer - bacon, ham, Canadian bacon, sausage patty, crab cake, chorizo
--Veggie layer - spinach, avocado, tomato, roasted peppers, sauteed mushrooms or onions, sprouts, fresh basil leaves, hash browns
--Sauces - salsa, tabasco, hollandaise, marinara, guacamole, gravy

MAKE IT CHEESY. Try adding cheese on top of the meat layer and melting it under the broiler before adding the egg and other toppings.

In a previous post, I shared my recipe for Corn Cake Toppers and showed how to serve them on top of chili and soup. Turns out that these pancake-style cornbread cakes also make a great base for layering breakfast foods. Think of eggs benedict with canadian bacon and egg on top of an english muffin, and all of the variations on that theme. The same endless combinations can be layered on top of a corn cake. And, let me tell you, it is some kinda wonderful!

I'm going to show the most basic corn cake breakfast stack in this post and then share some ideas of ways to expand on this theme. I just kind of happened onto this breakfast combo when I was left with some corn cakes in the fridge after topping chili with them the night before. Now I'm torn about which way I like them best--as a topper or a bottom-er. Hmmm. There must be a better word for that. Let me know if you think of one.

These breakfast stacks have 3 layers of ingredients: a fried egg, crispy bacon, and a corn cake. That's it. Here's how to make and assemble them.

Step 1. Make a batch of corn cakes. You'll find my step-by-step photos here:

Step 2. Cook some bacon. I like to bake mine in the oven and freeze the cooked bacon. It can be reheated in seconds in the microwave. Here's a link to my tutorial on baking bacon.

Step 3. Fry an egg, however you like it. I use a silicone egg rings. They work great for making the egg the perfect shape and size to top a corn cake or English muffin.

Step 4. Put a warm corn cake on a plate.

Step 5. Add some warm and crispy bacon.

Step 6. Top it with the fried egg.
