By the time Thanksgiving is over, most of us are cooked out. Yet, we have a fridge full of leftovers. What to do with all of that food? Here is a collection of my favorite recipes that are easy, healthy uses for your Thanksgiving leftovers. 

 

Recipes using
LEFTOVER TURKEY
I swap turkey for chicken in these recipes. 

Creamy Chicken (or Turkey) Noodle Soup --
Healthy & Low Fat

This is a favorite soup in our house, and a regular post-Thanksgiving meal. 

Uses: 2 cups chopped or shredded turkey

Chicken (or Turkey) Salad with Cranberries & Pecans
Healthy & lowfat--made with yogurt! Great on a sandwich, a bed of lettuce, or on crackers. 

Uses: 4 cups chopped or shredded turkey

Salsa Chicken (or Turkey)
An easy, delicious filling for burritos, enchiladas, tacos & more.

Uses: 4 cups chopped or shredded turkey (may easily be adapted for more or less turkey)

Baked Chicken (or Turkey) Parmesan Pasta Sauce --
So Easy, So Delicious
Love this--so quick to assemble and bake.

Uses: 2 cups chopped or shredded turkey

Chicken (or Turkey) Parm-urritos

Uses: 4 cups shredded turkey

Parmesan Chicken (or Turkey) Sandwich

Uses: 1/2 cup chopped, or shredded turkey in place of whole chicken breast. (Mix the marinara sauce with chopped or shredded turkey, spoon it on the bread, add red peppers & cheese, cook according to recipe directions.)

Pesto Chicken (or Turkey) Sliders
I usually serve these cold, but this filling is also good hot in a grilled sandwich. 

Uses: 4 cups shredded turkey

LEFTOVER MASHED POTATOES

Baked (or Mashed) Potato Soup -- Creamy & Lowfat
This is another favorite soup in our house.  

Uses: 4 cups cooked mashed potatoes

How to Freeze & Thaw Mashed Potatoes

You'll love the convenience of having these in your freezer for quick reheating later.

LEFTOVER CRANBERRY SAUCE

Cranberry Pull-Apart Sourdough Loaf
Assemble it the night before and bake it in the morning.

Uses: 1/2 cup cranberry sauce

Cranberry Pecan Refrigerator Oats
These make-ahead, no-cook oatmeal recipes are very popular.

Uses: 2 tablespoons cranberry sauce

Cranberry Vinaigrette
Drizzle a healthy salad of greens with this yummy dressing.

Uses: 1/2 cup cranberry sauce

Yum, you have some great ideas here! We all love making those little sandwiches with the leftover dinner rolls piled with turkey, stuffing, and cranberry sauce - they are really good in the panini maker too. Once we have our fill of those we are usually out of leftovers! Hope your had a wonderful Thanksgiving :)
