Microwave Melted Chocolate for Dipping and Drizzling

It is so easy to melt chocolate chips (or other baking chip flavors) in the microwave and use them for dipping strawberries, cookies or pretzels. They taste better and look instantly elegant after dipping in chocolate. This also works as a drizzle on caramel apples.
Ingredients
- 1 (12 oz) bag or 2 cups chocolate chips (milk, semi-sweet, white--or any baking chip flavor of your choice)
- 2 tablespoons canola oil
Directions
Put chocolate chips (or other baking chip flavor) in a microwave-safe bowl with 2 tablespoons canola oil. Microwave power varies, so exact times cannot be recommended. Cook on full power, checking at 20 second intervals, stirring each time. Stop heating when most, but not all, of the chips are melted--there should be a few chunks left. Stir until it is smooth and chips are completely melted. (Approx. 60 sec. total.) Be careful not to overcook. Dip fruit, cookies, or pretzels in melted chocolate and place on parchment or waxed paper lined tray until chocolate hardens.
Additional tips and suggestions:
--Adjust the recipe for any quantity. For each cup of chocolate chips, add 1 tablespoon canola oil.
--Dip cookies (oatmeal, shortbread, vanilla wafers, ginger snaps, biscotti) half way into the melted chocolate, for an elegant touch.
--Melt other chip flavors in the same way. Try butterscotch, vanilla, peanut butter.
--Use this recipe for melting baking chips to drizzle on caramel apples.
