6 cups crispy brown rice cereal (Rice Krispies may be substituted)
Butter a 9x13 pan or coat it with cooking spray. Set aside. In large saucepan over low heat, melt butter. Add marshmallows and stir frequently until completely melted. Remove the pan from the heat and stir in the rice cereal. Working quickly, stir until cereal is evenly coated. Add mixture to 9x13 pan. Spread and flatten it evenly using the bottom of a drinking glass that has been buttered or coated with cooking spray. Cool and cut into squares. Or, cut into shapes using cookie cutters. Best if eaten within 1-2 days.
*Optional add-ins and variations: --Stir 1/2 cup peanut butter (or other nut butter) into the melted marshmallow mixture. --Stir in 1/3 cup chopped nuts with the rice cereal. --Stir in 1/3 cup raisins, dried cranberries, or other dried fruit with the rice cereal. --Stir in 1 cup chocolate, butterscotch, vanilla, or peanut butter chips with the rice cereal. --Dip all or part of each square in melted chocolate.
