This simple and flavorful recipe is made easier with the use of an air fryer. It’s light, savory, and packed with nutrients—perfect alongside any main course or as a wholesome plant-based option.
The green beans and mushrooms get slightly charred while the onions caramelize and crisp. It's a tasty combination of flavors and textures. The recipe is infinitely customizable with the addition of a number of topping options like bacon crumbles, dried cranberries, parmesan, chopped boiled eggs, nuts, herbs, or chili crisp.

Air Fryer Green Beans with Mushrooms
Step 1. Assemble the ingredients
Step 2. Add the ingredients to a bowl and toss to combine.
Step 3. Add the green bean mixture to the air fryer (a basket-style air fryer is pictured here). Cook at 400 degrees F for 15 minutes, stirring at the halfway point. If you prefer more browning and char, cook in 2 batches.
SERVE hot or at room temperature. It's a yummy combination of flavors and textures.

Add green beans, mushrooms & onion to large bowl. Drizzle on olive oil, sprinkle with salt, pepper, and garlic powder; toss to evenly coat veggies.
Preheat air fryer to 400 degrees F.
Optional: If desired use parchment paper basket liner for easier clean-up.
Add green bean mixture to air fryer basket; distribute evenly. Cook 15 min, until some green beans are slightly browned and cooked through, stirring half way through cooking time. (NOTE: For more browning and char, cook in two batches.)
Add optional toppings, if desired.
